- 10 fresh sage leaves, chopped or 2 tbs dried
- 2 shallots, finely chopped
- 2 tsp olive oil
- The Béchamel
- 3 tbs butter
- 3 tbs flour
- 2 cups (16oz, 480gr) milk
- 1 tbs Dijon-style mustard
- 1/2 cup (2oz, 60gr) grated Parmesan plus extra for sprinkling
- 12oz (350gr) cooked spinach, all moisture squeezed out
- 1/2 cup (3.5oz, 100gr) ricotta cheese
- 1/2 - 3/4 cup flour
