- 1 stick butter, softened
- 1/4 cup maple syrup
- 1/2 teaspoon maple extract

...it%20is%20SO%20easy%20to%20make%20and%20would%20have%20any%20Foodie%20licking%20her%20plate!%20%20I%20need%20to%20find%20some%20time%20to%20make%20her%20S'mores%20Cake,%20pictured%20above...I'm%20sure%20it's%20life-changing!%3C/p%3E%3Cp%3EDeb%20stopped%20in%20Seattle%20on%20her%20whirl-wind%20book%20tour%20and%20I%20was%20lucky%20enough%20to%20get%20to%20see%20her%20at%20The%20Book%20Larder%20in%20Fremont%20(many%20strings%20were%20pulled%20to%20get%20me%20in%20-%20thanks%20so%20much%20to%20those%20string%20pullers!!)%20%20The%20Book%20Larder%20is%20an%20adorable%20little%20shop%20-%20%20a%20%22Community%20Cookbook%20Store%22%20with%20a%20full%20kitchen%20where%20they%20have%20cooking%20demonstrations%20and%20classes%20-%20you%20can%20check%20out%20their%20schedule%20by%20clicking%20here.%20%20I%20already%20have%20several%20dates%20written%20on%20my%20calendar!%20%20Back%20to%20Deb,%20she%20is%20charming,%20sweet,%20and%20every%20bit%20as%20interesting%20in%20person%20as%20she%20is%20on%20her%20blog...which%20is%20not%20always%20the%20case...some%20people%20only%20write%20well,%20some%20people%20only%20speak%20well...Deb%20can%20do%20both!%3C/p%3E%3Cp%3EThe%20very%20last%20thing%20I%20needed%20was%20another%20specialty%20bake%20pan...but%20I%20couldn't%20resist%20the%20Acorn%20Cakelet%20Pan%20from%20Nordic%20Ware...it%20spoke%20to%20me!%20%20I%20made%20the%20yummiest%20maple%20flavored%20cakelets...every%20bite%20tasted%20like%20Fall...cinnamon,%20nutmeg%20and%20maple%20extract%20swirled%20into%20a%20moist,%20dense%20cake...it's%20kind%20of%20a%20cross%20between%20a%20cake%20and%20a%20muffin%20with%20a%20hint%20of%20Maple%20Bar!%20%20Seriously%20good%20-and%20you%20don't%20need%20a%20fancy%20pan%20to%20bake%20these%20in%20-%20you%20can%20use%20a%20cupcake%20tin,%20which%20I%20did%20with%20half%20of%20the%20batter.%3C/p%3E%3Cp%3ESo%20cute...but%20they%20taste%20even%20better%20than%20they%20look!%20%20They%20are%20frosted%20with%20a%20maple%20frosting...because%20as%20you%20know,%20too%20much%20of%20a%20good%20thing%20is%20almost%20enough.%20%20If%20you%20are%20a%20maple%20fan,%20these%20are%20for%20you...if%20you%20aren't%20a%20maple%20fan,%20with%20one%20bite%20you%20will%20be.%20%20These%20get%20a%20resounding%205%20dangs%20on%20the%20ol'%20Dang%20Meter...the%20are%20dang,%20dang,%20dang,%20dang,%20dang%20good!%3C/p%3E%3Cp%3EMaple%20Cakelets%20-%20Recipe%20from%20Nordic%20Ware,%20Betty%20Crocker%20and%20Pots%20and%20Pins%3C/p%3E%3Cp%3ETo%20make%20cakelets:%20%20Prepare%20baking%20pans.%20%20If%20you're%20using%20a%20specialty%20pan,%20like%20the%20one%20I%20used,%20coat%20with%20grease%20and%20flour%20the%20pan.%20%20If%20you're%20using%20a%20mini-cupcake%20tin,%20grease%20and%20flour%20or%20use%20cupcake%20liners.%20%20Preheat%20oven%20to%20350%20degrees.%20%20In%20a%20small%20bowl,%20combine%20flour,%20baking%20powder,%20salt%20cinnamon%20and%20nutmeg%20and%20set%20aside.%20%20In%20another%20small%20bowl,%20combine%20milk,%20maple%20syrup,%20vanilla%20and%20maple%20extracts;%20set%20aside.%20%20In%20the%20bowl%20of%20an%20electric%20mixer,%20beat%20butter%20and%20brown%20sugar%20on%20medium%20speed,%20until%20light%20and%20fluffy.%20%20Beat%20in%20eggs,%20scraping%20bowl%20often.%20%20Reduce%20speed%20and%20blend%20in%20flour%20mixture,%20alternating%20with%20milk%20mixture;%20until%20all%20ingredients%20have%20been%20incorporated.%20%20Mix%20until%20just%20combined,%20do%20not%20over%20mix.%20%20Spoon%201%20tablespoon%20batter%20into%20each%20of%20the%20wells%20in%20the%20prepared%20baking%20pan.%20%20Bake%20at%20350%20degrees%20for%2010%20to%2012%20minutes,%20until%20toothpick%20inserted%20comes%20out%20clean.%20%20Cool%2010%20minutes%20in%20pan.%20%20Invert%20on%20cooling%20rack%20to%20cool%20completely%20before%20frosting.%20Makes%2036%20cakelets%20(mini-cupcake%20size)%20or%2024%20acorn%20cakelets%20(two%20frosted%20together%20to%20make%20one.)%3C/p%3E%3Cp%3ETo%20make%20frosting:%20%20In%20a%20medium%20bowl%20combine%20all%20ingredients%20on%20medium%20speed,%20adding%20additional%20cream%20and/or%20powdered%20sugar%20as%20needed%20until%20frosting%20is%20light%20and%20fluffy.%20%20Cover%20frosting%20until%20ready%20to%20frost%20cakelets.%3C/p%3E){kind=link}
