  • 1/2 c. Hot water
  • 1 tsp Granulated sugar
  • 1 x Packed Tbsp. fresh yeast or possibly
  • 5 1/4 tsp Active dry yeast - (1 envelope)
  • 2 c. Hot lowfat milk
  • 1/2 c. Unsalted butter - (1 stick) melted
  • 3/4 tsp Salt
  • 2 c. All-purpose flour
  • 2 lrg Large eggs
  • 1/4 tsp Baking soda

  1. The night before, in a large mixing bowl (at least 3 qts in capacity) combine hot water (100 degrees if using fresh yeast, 110 degrees if using dry yeast), sugar and yeast. Stir and let stand 10 to 20 min to proof. If the yeast is active, it will produce many bubbles.
  2. Add in lowfat milk, butter, salt and flour; beat till smooth and blended. Cover bowl with plastic wrap; let stand overnight at room temperature. (The batter will rise from 4 c. to 12 c., then collapse.) In the morning, preheat the waffle iron till it is warm sufficient to sizzle a drop of water. (For crispy waffles, be sure to preheat both sides till very warm before adding the batter.). Beat in the Large eggs. Add in baking soda; stir till well-mixed. The batter will be very thin.
  3. Pour the batter onto center of the waffle iron, using a light hand because the batter will spread when the lid is lowered. Tilt the waffle iron to spread the batter around the edges. Lower the lid and cook till the bottom is golden. Flip the waffle iron and briefly cook the other side till just golden. (If using an electric waffle iron, follow the manufacturer's directions.) Keep the waffles hot and crisp by placing them in a single layer on racks in a hot oven with the door slightly ajar to allow any moisture to escape.
  4. Yield: 6 to 8 servings.
