Ingredientes

  • 2 c. whole lowfat milk
  • 2 c. heavy cream
  • 2/3 c. sugar
  • 1 x vanilla bean split lengthwise
  • 2 c. mascarpone cheese room temperature
  • 1 tsp grated lemon zest
  • 2/3 c. toasted pine nuts

Direcciones

  1. In a medium saucepan, combine the lowfat milk, cream and sugar. Cook over medium heat, stirring till the sugar is dissolved, then cook till bubbles form around the edges of the pan. Remove from heat. Add in the vanilla bean, scraping the seeds into the lowfat milk and let stand for 30 min. Cover and chill for at least 2 hrs, or possibly till thoroughly chilled.
  2. Remove the vanilla pod. Stir in the mascarpone, lemon zest and pine nuts. Transfer to an ice cream maker and freeze according to the manufacturerOs instructions.
  3. Makes 1 1/2 qts.
