Receta Mascarpone Scrambled Eggs with Arugula Pesto
Ingredientes
- 5 large eggs
- 1 tablespoon whole milk
- 1/2 tablespoon unsalted butter
- 2 tablespoons Mascarpone Cheese
- Salt, to taste
- Freshly ground black pepper, to taste
- Arugula pesto (recipe follows), to taste
- Top the scrambled eggs with the arugula pesto and serve over a piece of whole wheat toast.

- Makes about 1/2 cup
- 2 large handfuls of Arugula
- 2 tablespoons slivered almonds
- 1/3 cup grated Parmesan cheese
- 1/4 cup olive oil, more if needed
- Salt, to taste
