- 1/2 teaspoon Italian seasoning
- 1-2 tablespoons sugar (to taste)
- 1/4 teaspoon baking soda
- 1/4-1/2 teaspoon red pepper flakes
- about 1″-2″ cube of hard, dry Parmesan cheese (optional)
- kosher salt to taste

- 1 pound lean ground beef (I use 93/7)
- 1 pound spicy Italian pork sausage
- 2 1/2 tablespoons dehydrated onion
- 1/4 cup minced garlic
- 2 tablespoons chopped fresh thyme
- 1 tablespoon chopped fresh oregano
- 1 tablespoon chopped fresh Italian parsley, plus more for garnish
- 1 large egg, beaten
- 1/2 cup grated fresh Parmesan cheese
- 12 ounces ricotta cheese
- 1 1/2 teaspoons kosher salt
- 3/4 cup Italian-seasoned panko bread crumbs
- Provolone or mozzarella cheese
