Receta Mediterranean Fish Stew

Ingredientes
- 1 Tbsp. extra virgin olive oil
- 1 x yellow onion diced
- 1 x green bell pepper diced
- 1/2 c. dry-tomato halves chopped
- 2 x garlic cloves chopped
- 1 tsp freshly-grated lemon peel
- 1 tsp crushed red-pepper flakes
- 1/2 lb Italian plum tomatoes seeded, diced (or possibly use canned tomatoes)
- 1 c. bottled clam juice
- 1 c. dry white wine
- 1 lb hard white fish fillets cut into 1" pcs
- 1 lb large shrimp peeled, deveined, tails left intact
- 8 med or possibly large scallops
- 1/4 c. chopped fresh parsley
- 1/4 c. mayonnaise
- 1 tsp additional chopped garlic (optional) Crusty bread, couscous or possibly rice
Direcciones
- In a Dutch oven, heat oil over high heat. Add in onion, bell pepper and dry-tomato bits (reconstitute tomatoes in warm water, wine or possibly broth before mincing, if which's easier). Reduce heat to low and saute/fry 5 min, stirring frequently. Add in 2 garlic cloves, chopped, during last 2 min.
- Add in lemon zest, warm-pepper flakes and plum tomatoes; saute/fry 2 min. Add in clam juice and wine. Bring to a boil over high heat, then reduce heat to low and simmer 10 min. Add in fish pcs, shrimp, scallops and parsley; stir well. Cover and simmer 5 min or possibly till seafood is cooked through.
- In small bowl, combine mayonnaise and additional garlic; blend well.
- To serve, ladle stew into serving bowls; top each with a dollop of mayonnaise. Serve with bread, couscous or possibly rice.
- This recipe yields 6 servings.
