Receta Melon And Parma Ham Soup ( Zuppa Di Melone E Prosciutto)

Ingredientes

  • 1 x very ripe 1.5kg cantaloupe or possibly charentais melon (orange flesh is essential)
  • 1 x juice of 1 orange juice 1/4 lemon
  • 1/2 tsp sea salt
  • 1/2 tsp coarsely grnd pink peppercorns sugar to taste
  • 4 lrg slices Parma ham cut into thin ribbons Peel and liquidize the melon to a coarse puree. Stir in the orange and lemon juices.

Direcciones

  1. Season with salt and pepper and add in sugar to taste (this shouldn't be necessary if the melon is ripe and flavourful).
  2. Fold in one quarter of the Parma ham and divide the soup between the four bowls.
  3. Sprinkle the remaining Parma ham onto the soup with a final twist of the pepper grinder on top.
  4. This is a wonderful way to enjoy Parma ham and melon and not ony for toothless pcople! It adds another dimension to summer eating. Thc combination of a little orange and lemon juice gives it a special spiciness and in summer this is one of the best sellers in my restaurant.
