- These can be made with shredded beef, pork or chicken. I usually throw the meat in the Crockpot for easy shredding.
- But first fry corn tortillas in vegetable oil until lighted browned, place on paper towel to absorb oil.
- Place meat on corn tortilla & just add your favs - black beans, corn, jalapenos, diced tomato's, black olives, shredded lettuce salsa - we even sometimes use Salsa Verde (green).
- Now we assemble the pizzas by adding your favorite cheese (Colby jack, cheddar, pepper jack etc.) & bake until cheese melts.
- If you do not want your sides heated at all you can add the meat & cheese first, them bake until melted then add your sides cold.
- Happiness is homemade!
