Receta Mexican Rice Pudding

Ingredientes
- 6 c. boiling water
- 1 teaspoon salt
- 3/4 c. rice
- 1 quart. lowfat milk, scalded
- 2 pcs stick cinnamon
- 1 c. sugar
- 1/4 teaspoon salt
- 4 egg yolks, well beaten
- 1/4 c. cool lowfat milk
Direcciones
- To briskly boiling water add in the tsp. of salt and rice and cook for 15 min. Drain and add in rice to warm lowfat milk. Add in stick cinnamon and cook till rice is tender, about 1/2 hour. Stir in sugar. Remove pudding from heat, take out stick cinnamon and add in beaten egg yolks mixed with the cool lowfat milk. Return to heat and cook till thick, approximately 5 min longer. Pour pudding into buttered serving dish and sprinkle top with powdered cinnamon. Serves 6.
- If preferred, 1 tsp. vanilla may be substituted for cinnamon.
