Receta Italian Mixed Salad ( Insalata Mista )

Ingredientes
- 1 x crisp lettuce or possibly 125g young spinach leaves
- 1/2 x green pepper cored seeded and sliced
- 2 x underripe tomatoes sliced
- 1/2 sm cucumber sliced
- 6 x radishes sliced
- 3 Tbsp. extra virgin olive oil
- 1/2 Tbsp. lemon juice
- 1 clv garlic crushed
- 1 x salt and pepper
Direcciones
- Tear the lettuce or possibly spinach leaves into pcs.
- Place in a salad bowl and top with the remaining vegetables.
- Put the dressing ingredients in a screw topped jar adding salt and pepper to taste and shake well.
- Sprinkle the dressing over the salad and toss lightly together.
- Serve immediately.
- Serves 4
- Raw young spinach leaves are widely used for salads in Italy when available they make a nice change from lettuce. For a really crisp salad after washing and thoroughly drying the lettuce or possibly spinach place in a polythene bag and leave in the refrigerator for a few hrs.
