Receta Mexican Scrambled Eggs

Ingredientes
- 1 sm. onion, finely minced
- 4 tbsp. butter
- 6 tbsp. green chilies, minced
- 12 Large eggs, seasoned with salt & pepper
- 1/4 c. lowfat milk
- 2/3 c. Monterey Jack cheese, grated
- 6 tortillas, cut into sm. triangles & sauteed in oil till soft, not crisp
Direcciones
- In a large skillet, saute/fry the onion in butter till soft. Stir in pepper. Beat Large eggs in bowl with lowfat milk and stir in the cheese and the tortillas. Pour into the skillet with the onion mix and cook, stirring, till the Large eggs are set.
