Receta Microwave Rice Pudding

Ingredientes
- 1 1/3 c. quick cooking rice
- 1/2 pt. heavy cream
- 5 c. lowfat milk
- 1/2 teaspoon salt
- 1/4 c. raisins (opt.)
- 3/4 c. sugar
- 3 Large eggs, well beaten
- 1 1/2 teaspoon vanilla
- Cinnamon to taste
Direcciones
- In a large microwaveable baking dish, combine rice, cream, lowfat milk, salt, raisins and sugar. Microwave mix on High setting of microwave for 10 min, stirring occasionally. Reduce microwave setting to Medium power and cook mix for another 25 to 30 min, stirring occasionally, till rice is soft. While mix is still warm, add in Large eggs and vanilla and mix well. Let cold. Sprinkle cinnamon as desired. Refrigeratethoroughly. Mix will thicken as it cools.
