- 2 1/4 cups King Arthur Unbleached All-Purpose Flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsweetened cocoa
- 1 3/4 cups granulated sugar
- 1/2 cup (1 stick) unsalted butter, very soft
- 1/3 cup vegetable oil
- 1/2 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 1 cup milk, warmed in microwave for 1 minutes
- 1/2 water, boiling
- 4 large eggs, separated & whites beaten until stiff peaks form
- ½ bag of creme de menthe chips
- 12 tablespoons butter, softened
- 5 â cups powdered sugar
- â cup milk
- 2 teaspoon vanilla extract
- 4 teaspoon peppermint extract

%20and%20it%20was%20my%20duty%20to%20make%20the%20cake.%20%20Of%20course,%20I%20didn't%20complain;%20it's%20more%20experience%20in%20the%20kitchen,%20more%20material%20for%20my%20blog%20and%20another%20chance%20to%20make%20my%20Grandpa%20smile!%20%20His%20favorite%20ice%20cream%20flavor%20is%20mint%20chocolate%20chip.%20%20As%20long%20as%20I%20can%20remember,%20every%20single%20time%20we%20have%20ever%20gotten%20ice%20cream,%20he%20always%20orders%20mint%20chocolate%20chip%20if%20they%20have%20it.%20%20May%20summers%20in%20Frankfort%20were%20spent%20walking%20down%20to%20the%20Cool%20Spot%20and%20order%20ice%20cream%20with%20Grandpa.%20%20I%20couldn't%20think%20of%20what%20kind%20of%20cake%20to%20make%20him%20until%20I%20was%20thinking%20about%20how%20much%20I%20wanted%20some%20ice%20cream%20(even%20if%20I%20can't%20eat%20it).%20%20Then%20I%20remember%20my%20Grandpa's%20LOVE%20of%20mint%20chocolate%20ice%20cream%20and%20the%20cake%20was%20born!%3C/p%3E%3Cp%3EI%20looked%20all%20over%20the%20internet%20and%20there%20were%20no%20recipes%20that%20I%20really%20liked.%20%20Some%20required%20only%20mixing%20together%20the%20wet%20and%20dry%20ingredients%20-%20I%20know%20that%20wouldn't%20produce%20cake%20results%20I'd%20like%20(it'd%20most%20likely%20come%20out%20too%20dense).%20%20Instead%20I%20turned%20my%20attention%20to%20King%20Arthur.%20%20I%20based%20my%20recipe%20off%20their%20Chocolate%20Cake%20recipe.%20%20I%20didn't%20want%20anything%20too%20chocolatey,%20as%20it%20would%20overpower%20the%20mint%20flavor%20I%20was%20going%20for.%20%20But%20at%20the%20same%20time,%20I%20didn't%20want%20it%20to%20fall%20flat%20and%20taste%20boring%20like%20milk%20chocolate.%20%20So,%20I%20had%20to%20improvise.%20%20I%20also%20used%20my%20own%20recipe%20for%20mint%20buttercream%20-%20I%20just%20followed%20the%20rule%20of%20ratios.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%C2%B0F.%20Lightly%20grease%20and%20flour%20three%208%22%20round%20pans.%3C/p%3E%3Cp%3EPlace%20a%20strainer%20over%20a%20large%20mixing%20bowl.%20Measure%20in%20the%20flour,%20baking%20powder,%20baking%20soda,%20salt,%20cocoa,%20and%20sugar.%20Sift/shake%20the%20dry%20ingredients%20through%20the%20strainer%20into%20a%20mixing%20bowl,%20to%20eliminate%20any%20lumps.%3C/p%3E%3Cp%3EAdd%20the%20butter%20and%20mix%20at%20low%20speed%20for%201%20minutes.%20With%20the%20mixer%20running,%20add%20the%20oil%20and%20continue%20mixing%20until%20the%20mixture%20looks%20like%20sand.%3C/p%3E%3Cp%3ECombine%20the%20vanilla%20with%20the%20milk%20and%20coffee%20or%20water,%20and%20add%20all%20at%20once.%20Mix%20for%201%20minute%20at%20low%20speed,%20stop%20and%20scrape%20the%20sides%20and%20bottom%20of%20the%20bowl,%20then%20mix%20for%2030%20seconds%20more.%3C/p%3E%3Cp%3ESeparate%20the%20eggs.%20%20Beat%20the%20whites%20until%20stiff%20peaks%20form,%20set%20aside.%20%20Beat%20in%20egg%20yokes%20one%20at%20a%20time.%20%20Stir%20in%20creme%20de%20menthe%20chips.%20%20Then%20gently%20fold%20in%20egg%20whites.%3C/p%3E%3Cp%3ETransfer%20the%20batter%20to%20the%20prepared%20pan.%20Bake%20for%2024%20to%2026%20minutes.%3C/p%3E%3Cp%3EThe%20cake%20is%20done%20when%20the%20top%20springs%20back%20when%20very%20lightly%20touched%20in%20the%20center,%20and%20the%20edges%20just%20begin%20to%20pull%20away%20from%20the%20edge%20of%20the%20pan.%20A%20toothpick%20inserted%20in%20the%20center%20will%20come%20out%20clean.%3C/p%3E%3Cp%3ERemove%20the%20cake%20from%20the%20oven%20and%20place%20on%20a%20rack%20to%20cool%20before%20removing%20it%20from%20the%20pan.%3C/p%3E%3Cp%3EOnce%20cooled,%20put%20the%20cakes%20in%20the%20freezer%20for%20about%20a%20half%20an%20hour.%20%20When%20'frozen'%20remove%20and%20cut%20layers%20in%20half%20(you%20will%20now%20have%206%20'layers').%3C/p%3E%3Cp%3EMint%20Buttercream%20Frosting%3C/p%3E%3Cp%3E12%20tablespoons%20butter,%20softened%3C/p%3E%3Cp%3E5%20%E2%85%93%20cups%20powdered%20sugar%3C/p%3E%3Cp%3E%E2%85%94%20cup%20milk%3C/p%3E%3Cp%3E2%20teaspoon%20vanilla%20extract%3C/p%3E%3Cp%3E4%20teaspoon%20peppermint%20extract%3C/p%3E%3Cp%3Egel%20icing,%20until%20desired%20color%20is%20achieved%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20beat%20the%20butter%20at%20a%20low%20speed%20with%20an%20electric%20mixer%20or%20tabletop%20mixer.%3C/p%3E%3Cp%3EAdd%20powdered%20sugar,%20alternating%20with%20the%20milk,%20and%20beat%20to%20smooth,%20but%20thick%20consistency%20(you%20may%20need%20to%20add%20more%20milk%20or%20sugar)%3C/p%3E%3Cp%3EStir%20in%20vanilla%20and%20peppermint.%20If%20you%20want%20a%20less%20minty%20flavor,%20decrease%20the%20peppermint%20extract%20or%20leave%20out%20altogether.%3C/p%3E%3Cp%3EGrandpa%20blowing%20out%20his%20candles!%3C/p%3E%3Cp%3ELook%20at%20those%20six%20(slightly%20demolished)%20layers!!%3C/p%3E){kind=link}
