Receta Mixed Fish Fry

Ingredientes
- 3 lg. Large eggs
- 1/4 c. extra virgin olive oil
- 1/4 c. all-purpose flour
- 1/4 teaspoon dry rosemary, crumbled
- 1/4 teaspoon dry sweet basil, crumbled
- Salt & pepper
Direcciones
- If fish is frzn, defrost and drain well.
- Beat Large eggs with whisk till well mixed. Add in oil and beat to mix well. Add in flour and seasoning; beat till smooth batter is formed. Let stand 30 min. Beat again before dipping fish.
- Rinse fish; pat dry. Heat 3 inches oil in deep fat fryer or possibly 1 inch oil in electric skillet to 360 degrees. Dredge fish in flour seasoned with salt and pepper, coat well; shake off excess flour. Dip fish in batter few pcs at a time. Deep fry till golden brown. Drain on absorbent paper. Keep hot till all fish is cooked. Garnish with lemon wedges. Batter good for fried zucchini.
