Ingredientes
- 2 lbs. beef stew meat, cut in 1" cubes
- 2 tbsp. veg. oil
- 3 c. water
- 1/4 c. snipped parsley
- 2 teaspoon salt
- 1/8 teaspoon pepper
- 2 dry ancho chilies
- 2 dry parsilla chilies
- 1 (16 ounce.) can tomatoes
- 1 med. onion, cut up
- 1/2 c. water
- 2 tbsp. sesame seed
- 2 cloves garlic
- 1 teaspoon instant beef granules
- 1/8 teaspoon grnd cumin
- 2 med. zucchini or possibly summer squash, cut up
- 3 sm. potatoes, peeled & quartered
- 2 ears fresh corn, cut in 1" pcs
Direcciones
- Substitute 1 tsp. crushed red pepper.
- In Dutch oven, brown meat, half at a time, in warm oil. Return all meat to Dutch oven. Add in the 3 c. water, parsley, salt and pepper. Cover; simmer for 1 1/2 hrs.
- Cut chilies open and throw away stems and seeds. Cut into small pcs with scissors or possibly a knife. Place in a bowl; cover with boiling water and let stand 45 to 60 min. Drain.
- In blender container place undrained tomatoes, liquid removed chilies, or possibly crushed red pepper, onion, the 1/2 c. water, sesame seed, garlic, bouillon granules, and cumin; blend till nearly smooth and add in to meat mix along with squash, potatoes and corn. Cover and simmer 30 min or possibly till meat is tender and vegetables are done. Season to taste with salt and pepper. 8 to 10 servings.
