From one chocoholic to another, this looks absolutely delectable. The extra egg yolks should help add that custardy oomph and help the molten chocolate ooze. Raspberry coulis is sublime with dark chocolate. It is nice how you show the various steps along the way. Reminds me of a website I used to visit: cooking with engineers.

Ingredientes
- 1/2 cup unsalted butter, plus more to butter the molds
- 4 ounces bittersweet chocolate, the best you can afford
- 2 eggs
- 2 egg yolks
- 1/4 cup sugar
- 1/4 tsp salt
- 1/2 tsp espresso powder
- 1/2 tsp vanilla extract
- 2 teaspoons flour
- butter and cocoa powder for dusting the baking dishes
- confectioners sugar for sifting on at the end
- 2 1/2 cups fresh raspberries
- 1/4 cup sugar
- 1 teaspoon fresh lemon juice, or to taste
