Receta Monday's Red Beans And Rice

Ingredientes
- 4 c. kidney beans
- 1 1/2 c. onion, minced
- 1 1/2 lbs. sausage, cut in chunks and partially cooked
- 2 tbsp. vegetable oil
- 2 tbsp. flour
- 1 c. green peppers, minced
- 1 c. tomato sauce
- Salt and pepper to taste
- 3 c. rice, cooked
- Minced scallions for garnish
Direcciones
- Cover beans with water and soak overnight. Drain, reserving 1 c. liquid. Then, barely cover with water and bring to a boil. Add in onions and sausage. Reduce heat, partially cover and cook for about 30 min or possibly till beans are tender.
