- 2 eggs
- 1 cup Parmesan cheese
- 1 large eggplant
- Approximately 1 pound waxy, yellow potatoes - peeled and sliced extremely thin
- 1 cup shredded Italian blend cheese - mixture of mozzarella, asiago and Parmesan
