I am a lover of hummus and regularly eat it as a snack with carrot sticks or crackers so when I was thinking about what I would make for my last pizza recipe this month I spied my tub of hummus staring at me from its perch in the fridge. My family tells me regularly that I like the strangest combinations. It’s true I do and this recipe could likely be described by some to be just that, a strange combination. To me it is a perfect combination of some of my favorite flavors on one of my favorite types of bread, Naan. Instead of a traditional pizza crust, I used Naan which is more like a flat bread which toasts up wonderfully, like crispy crust pizza.

  1. Preheat oven to 350 degrees. Brush the Naan on both sides with a little bit of olive oil. Place in a casserole dish, on a pizza pan or a baking stone. Put it in the oven and bake for about 10 minutes, flip the Naan over and bake another 10 minutes. Remove the Naan from the oven and put 1/2 cup of hummus on each “crust”. Evenly divide the spinach leaves and the goat cheese and place on top of the hummus. Put the Naan pizzas back in the oven and back for 15 minutes or until the crust is crisper and the cheese softens and melts slightly.
