Receta New Orleans Dirty Quinoa

Ingredientes
- 1 Tbsp. extra virgin olive oil
- 4 ounce chicken livers finely minced
- 1 c. minced onion
- 3/4 c. diced celery
- 1/2 c. diced green bell pepper
- 2 Tbsp. shallot minced
- 1/2 lb Canadian bacon lean style, minced
- 2 lrg cloves garlic chopped
- 1 x bay leaf
- 3 c. quinoa uncooked
- 1/3 c. water
- 1 Tbsp. Worcestershire sauce
- 2 tsp creole seasoning Emeril's
- 1/4 tsp warm sauce
- 27Â 1/2 ounce no-salt-added chicken broth (2 cans)
- 1/2 c. sliced green onions
Direcciones
- Heat extra virgin olive oil in a large saucepan over medium-low heat. Add in chicken livers, and saute/fry 4 min or possibly till done. Add in onion and next 6 ingredients; saute/fry 3 min or possibly till vegetables are crisp-tender. Add in quinoa, and cook 2 min, stirring constantly. Add in 1/3 c. water and next 4 ingredients; bring to a boil. Reduce heat, and simmer, uncovered, 15 min or possibly till liquid is absorbed, stirring occasionally. Remove from heat; throw away bay leaf, and stir in sliced green onions.
- Yield: 8 c. (serving size: 1 c.).
- NOTES : You'll find the grain quinoa (KEEN-wah) next to the rice at your supermarket.
