  1. In a bowl, sift together sorghum flour, tapioca flour, sugar, xanthan gum, baking powder and salt. Make a well in the center and pour in rice milk, egg*, vanilla and vegetable oil. Mix until smooth. Add Enjoy Life ® Not Nuts! ™ trail mix.
  2. Heat a lightly greased skillet or frying pan over medium high heat. To tell if the griddle is hot enough, place a few drops of water on the griddle. If the water droplets "dance" on the surface it is hot enough. Spoon batter onto the griddle, turn the heat to medium. Turn and cook the pancakes until brown. Serve hot and gobble away!
