- 3 cups sugar
- 1 1/2 cups white vinegar
- 1 1/2 cups water
- 2 T pickling seasoning, make a bouquet garni*

%20So%20here%20goes!!%3C/p%3E%3Cp%3E1.%20Cut%20the%20green%20and%20pink%20parts%20from%20watermelon%20rind;%20discard%20green%20and%20pink%20parts.%20Cut%20the%20white%20part%20of%20the%20rind%20into%201-inch%20pieces;%20measuring%209%20cups.%20Transfer%20the%20rind%20to%20a%20large%20bowl.%20Combine%20the%206%20cups%20water%20and%20pickling%20salt;%20pour%20over%20watermelon%20rind%20(add%20more%20water,%20if%20necessary,%20to%20cover%20rind)%20Let%20stand%20at%20room%20temperature%20for%208%20hours%20or%20overnight.%20Drain;%20rinse%20rind.%3C/p%3E%3Cp%3E2.%20In%20a%20large%20Dutch%20oven,%20cover%20watermelon%20rind%20with%20cold%20water.%20Bring%20to%20a%20boil.%20Lower%20heat%20and%20simmer,%20covered,%20for%2020-25%20minutes%20or%20until%20tender.%20Drain.%3C/p%3E%3Cp%3E3.%20In%20a%206-quart%20to%208-quart%20kettle%20or%20Dutch%20oven,%20stir%20together%20the%20sugar,%20vinegar,%20the%201-1/2%20cups%20water,%20and%20pickling%20bouquet%20garni.%20Bring%20to%20a%20boil.%20Lower%20the%20heat%20and%20simmer,%20uncovered,%20for%2010%20minutes.%3C/p%3E%3Cp%3E4.%20Add%20the%20watermelon%20rind%20and%20lemon%20juice%20to%20the%20kettle.%20Bring%20to%20a%20boil.%20Lower%20the%20heat%20and%20simmer,%20covered,%20for%2025%20minutes%20or%20until%20rind%20is%20clear.%20Discard%20bouquet%20garni.%3C/p%3E%3Cp%3E5.%20Prepare%203%20pint%20jars%20and%20lids;%20wash%20jars%20and%20lids%20in%20hot%20sudsy%20water%20and%20rinse%20well.%20Heat%20the%20lids%20and%20jars%20by%20pouring%20boiling%20water%20over%20and%20letting%20them%20stand%20in%20the%20hot%20water%20until%20you%20use%20them.%20Fill%20a%20water-bath%20canner%20half%20full%20of%20water.%20Cover%20and%20bring%20to%20a%20boil%20over%20high%20heat.%20In%20another%20large%20kettle,%20bring%20additional%20water%20to%20a%20boil.%3C/p%3E%3Cp%3E6.%20Immediately%20ladle%20the%20rind%20and%20hot%20sugar%20mixture%20into%20prepared%20jars,%20filling%20to%20within%201/2%20inch%20of%20tops.%20Wipe%20jar%20rims%20and%20threads.%20Quickly%20cover%20with%20lids,%20screw%20bands%20on%20firmly.%20Place%20the%20jars%20on%20the%20rack%20in%20canner.%20Fill%20canner%20with%20additional%20boiling%20water%20so%20that%20the%20water%20reaches%201%20inch%20over%20jar%20tops.%20Cover%20and%20bring%20to%20a%20rolling%20boil.%20Process%20for%2010%20minutes.%20Remove%20the%20jars%20and%20cool.%20Check%20the%20seal%20on%20each%20jar.%3C/p%3E%3Cp%3E7.%20Store%20in%20a%20cool,%20dark%20place.%20(will%20keep%20for%201%20year)%3C/p%3E%3Cp%3E*Note:%20I'm%20going%20to%20let%20the%20Watermelon%20Rind%20%22pickles%22%20set%20up%20for%20a%20few%20months%20before%20I%20give%20them%20a%20try...Check%20back%20in%20November%20when%20I'll%20be%20serving%20them%20at%20Thanksgiving...keep%20your%20fingers%20crossed!*%3C/p%3E%3Cp%3EHow%20to%20make%20a%20Bouquet%20Garni~%3C/p%3E%3Cp%3EBouquet%20Garni:%20[boo-KAY%20gahr-NEE]%20A%20bunch%20of%20herbs%20(the%20classic%20trio%20being%20parsley,%20thyme%20and%20bay%20leaf)%20that%20are%20either%20tied%20together%20or%20wrapped%20in%20cheesecloth%20and%20used%20to%20flavor%20soups,%20stews%20and%20broths.%20Tying%20or%20bagging%20the%20herbs%20allows%20for%20their%20easy%20removal%20before%20the%20dish%20is%20served.%3C/p%3E){kind=link}
