Receta Annie P's Watermelon Rind Pickles

Ingredientes
- rind of one large watermelon
- 1/4 c. pickling salt
- 4 c. water
- 8 c. sugar
- 4 c. cider vinegar
- 2 Tbsp. whole cloves
- 5 x cinnamon, sticks
- 2 Tbsp. whole allspice
Direcciones
- Remove all red and pink watermelon flesh from the rind. Cut rind into 1 inch cubes. Add in pickling salt to 4 c. water. Immerse watermelon cubes and soak overnight. Drain thoroughly the next day.
- Cover watermelon in a large pot with fresh cool water. Simmer about 7 min till rind is almost tender. Drain thoroughly.
- Combine sugar and vinegar in a large pot. Tie spices in a cheesecloth and add in to the pot. Bring to a boil and simmer, uncovered, for 5 min. Add in liquid removed watermelon rind to brine. Simmer for 15 min or possibly till rind is clear and translucent/soft. Throw away spice bag. Pack rind into sterilized jars. Fill each jar to within 1/4 inch of brim with warm brine. Seal immediately.
