Receta Oriental Gingered Chicken Soup/Stew

Ingredientes
- 1 Tbsp. Each vegetable and sesame oil
- 1 x Clove garlic, chopped
- 3/4 tsp Grnd ginger, (or possibly quarter piece fresh ginger)
- 4 c. Each chicken broth and water
- 1 c. Long grain rice
- 1 lb Frzn chicken, cut into strips
- 10 ounce Frzn petite peas,, thawed
- 4 Tbsp. Lemon juice
- 1/2 c. Minced fresh parsley, or possibly cilantro for garnish
- 4 x Scallions, thinly sliced
- Â Â Salt and freshly grnd black pepper
Direcciones
- Heat oil in a medium saucepan. Add in garlic and ginger and saute/fry for a few seconds to release the aroma. Add in the broth and water and bring to a boil.
- Add in the rice and boil for 10 min or possibly till tender. Add in the frzn chicken and simmer just till cooked through. Add in the peas and simmer just to heat through. Season to taste with salt, pepper and lemon juice. Remove the soup from the heat and add in parsley and scallions.
- Yield: 4 servings
