Receta Orzo Salad
I like to make and serve this whenever I am grilling
Ingredientes
- 1 cup orzo soup pasta, cooked and drained
- 1 ear corn, husked
- 1 medium sweet red or yellow pepper, halved and seeded
- 3 tablespoons plus 2 teaspoons light olive oil
- Juice of 1 lemon (2-3 Tablespoons)
- Salt and pepper to taste
Direcciones
- Drizzle corn and pepper hales with 2 teaspoons olive oil; arrange on grill. Grill, turning occasionally, until lightly browned on all sides, about 10 minutes.
- Remove from grill and let cool enough to handle. Cut corn kernels off cob. Dice peppers about same size as corn kernels.
- Toss cooked orzo with corn, peppers, 3 Tablespoons oil, and lemon juice. Season to taste with salt and pepper.
