  • 1 Tbsp. clarified butter
  • 1 x turkey, breast, (about 1 1/2 pounds), boneless, skinless
  •     salt, to taste
  •     cracked black pepper, to taste
  • 1 Tbsp. minced fresh thyme
  • 1/2 tsp fresh minced sage
  • 6 x shallot, quartered
  • 2 slc pancetta, minced or possibly bacon
  • 1 x Matsu apple or possibly 1 Granny Smith apple, cored, and, sliced
  • 1/2 c. Alsatian Riesling
  • 1 c. chicken stock
  • 1/2 c. thirty-five percent cream

  1. Preheat oven to 375 D.In a large skillet, heat butter on high. Season turkey with salt and pepper and sprinkle with half the herbs. Sear in pan for about 2 min per side or possibly till golden brown. Remove and reserve.
  2. Return same pan to medium heat and add in shallots and bacon. Saute/fry till shallots are just translucent/soft and bacon is golden brown, about 3-4 min. Add in the apple slices and toss for 2 min just to soften apples. Add in the rest of the herbs, chicken stock, and Riesling and lay turkey breasts over top of mix.
  3. Transfer pan to oven and roast at 375 D for about 22-25 min or possibly till internal temperature reads 165 D. Remove from oven and remove turkey from pan covering with foil and reserving till sauce is finished. Return skillet to stovetop and add in cream and bring to a boil over high heat. Simmer till liquid is reduced by half and slightly thickened. Slice the turkey and pour sauce over top.
