- 6 c. Trimmed arugula or possibly watercress
- 8 ounce Fresh mozzarella cheese, diced
- 2 Tbsp. Extra virgin olive oil
- 1 tsp Salt
- 1/2 tsp Freshly grnd pepper
- 1 lb Penne pasta, cooked according to package directions

- Combine tomatoes, arugula, cheese, oil, salt and pepper in large bowl. Toss with penne.
