Receta Peach, Plum And Blackberry Cobbler

Ingredientes

  • 6 x Peaches, peeled, pitted, sliced
  • 2 x Red plums, halved, pitted, sliced
  • 1 x Basket blackberries or possibly 1 1/2 c. frzn, unthawed (1/2-pint)
  • 2/3 c. Plus 1 Tbsp. sugar
  • 3 Tbsp. Quick-cooking tapioca
  • 3/4 c. Plus 2 Tbsp. all purpose flour
  • 1 tsp Baking pwdr
  • 1/4 tsp Salt
  • 1 tsp Grated lemon peel
  • 5 Tbsp. Chilled unsalted butter
  • 6 Tbsp. Chilled whipping cream
  • 3 Tbsp. Golden sugar
  • 1/2 tsp Grnd cinnamon
  • 1/4 tsp Grnd ginger
  • 1 pch Grnd cloves
  •     Sweetened whipped cream

Direcciones

  1. Preheat oven to 400F. Combine fruit, 2/3 c. sugar and tapioca in 8x8x2-inch glass baking dish and toss to blend. Bake till tender and bubbling thickly, about 50 min. Cold 10 min.
  2. Meanwhile, mix 3/4 c. flour, baking pwdr, salt and 1 Tbsp. sugar in medium bowl. Add in lemon peel and 3 Tbsp. butter; using fingertips, rub in till mix resembles coarse meal. Add in cream; stir till moist clumps form. Gather into ball. Using floured hands, pat out dough on floured surface to 6-inch square. Cut into 6 equal rectangles.
  3. Mix brown sugar, spices and 2 Tbsp. butter; using fingertips, rub in till topping mix begins to clump together.
  4. Place biscuits atop warm cobbler. Top with brown sugar mix. Bake till biscuits are golden brown, about 25 min. Cold 30 min. Serve with cream.
  5. Serves 6.
