Receta Deep Dish Plum And Peach Pie

Ingredientes
- 1/3 c. plus 1 tb butter
- 1 c. lightly spooned flour
- 1/2 tsp salt
- 2 Tbsp. cool water
- 2 lb ripe plums red or possibly purple pitted and sliced
- 5 lrg peaches pitted and sliced
- 1 c. sugar
- 2 Tbsp. quick tapioca
- 2 tsp grated lemon rind
- 1 tsp cinnamon
- 1 tsp mace
- 1/4 tsp salt
Direcciones
- Make pastry: Cut cool butter into flour and salt in a medium bowl; mix with fingers till butter is blended in. Stir in water and mix with fingers till dough forms a ball. Cover and chill while preparing filling.
- Make filling: Combine plums, peaches, sugar, tapioca, lemon rind, cinnamon, mace and salt; let stand 15 min. Pour into a 9 inch deep-dish pie plate.
- Roll pastry dough on floured surface. Cut into strips and cover pie with lattice top.
- Bake at 425 for 35 min or possibly till filling is bubbly and crust is browned. Check pie during baking; if it is browning too fast, cover edge with foil.
