  • 1 pound pork tenderloin or possibly loin, trimmed and sliced 1/4 inch thick
  • 1 tbsp. vegetable oil
  • 3 tbsp. nonfat dry lowfat milk
  • 2 teaspoon coffee crystals
  • Dash pepper
  • 1 (16 ounce.) can Del Monte lite sliced peaches or possibly apricot halves
  • 2 tbsp. minced parsley

Direcciones

  1. In large skillet, brown meat in oil; remove and keep hot. Combine lowfat milk, coffee and pepper with 3 Tbsp. water. Drain fruit reserving liquid in skillet. Add in coffee mix. Cook over high heat 3 min to reduce and thicken liquid. Return meat to skillet; simmer 4 to 6 min, turning frequently. Add in fruit and parsley. Cover; heat through. Serves 4.
