Receta Peanut Butter Bulalo (Beef Shank Soup)

Yep, you're reading that correctly: peanut butter and bulalo, a seemingly odd combination. But give it a try and you might just be surprised. Bulalo is the popular soup or stew dish in the Philippines that consists of beef shanks and selected vegetables, boiled in water and spices for hours until all the rich flavors of the meat bones seep into the liquid.

This recipe idea came to mind after a recent visit to the Philippines where I treated myself to traditional dishes including bulalo, and kare kare, another popular Filipino cuisine that uses peanut butter as sauce for a meat and vegetable stew.

You can choose to include as much of the beef shank meat as you'd like or minimize your recipe by just using the bones to generate the soup.

  • 2 lbs beef shank (if using the meat, cut into 1-inch pieces)
  • 1 onion, quartered
  • 3 cloves garlic, peeled and crushed
  • 1/4 cup chopped green onions
  • 1 medium sweet potato, peeled and cut into small pieces
  • 1 cup, bok choy, cut into thin ribbons
  • Salt and pepper to taste
  • 4 tbsps fish sauce
  • 18 cups water
  • 2-3 tbsps, creamy peanut butter
  • 1 tbsp unsalted peanuts

Direcciones

  1. In a large pot, boil 8 cups of water.
  2. Add the beef shank pieces and return to a boil. Continue boiling for about 10 minutes.
  3. Drain the meat and bones , discarding the liquid.  
  4. Place the beef shank/meat at the bottom of a slow cooker.  
  5. Add garlic, onions, sweet potato and green onions on top of the beef shank.  
  6. Fill the slow cooker with the remaining water.
  7. Add salt and pepper to taste.
  8. Add fish sauce.  
  9. Turn slow cooker to low and cook for 8 hours.  
  10. Place the slow cooker pot and all its contents in the refrigerator overnight.  
  11. When ready to serve, retrieve slow cooker pot and scoop out the hardened oil that has formed on top of the soup.
  12. Transfer the rest of the contents into a large pot and heat on a stove for 5-10 minutes, slowly adding the peanut butter until it is fully blended with the soup.  
  13. Remove from heat and serve in soup bowls, garnishing each bowl with the fresh bok choy and unsalted peanuts.
