Fish and chips is a hot dish of English origin, consisting of battered fish, commonly Atlantic cod or haddock, and potato chips. In other countries, including the U.S., other types of fish are used, depending on availability in any given region.  Halibut, flounder, tilapia and other white fish are used.

For this recipe, I used mahi-mahi fillets.  Instead of the usual potato chips or fries, I used the more healthy sweet potato.

  1. Roll each fillet first in flour, then the egg and finally the bread crumbs, making sure the entire fillet is even coated with the breading. Heat Olive oil in a medium pan and fry the breaded fillet until the breading turns golden brown, turning over once. Remove fried fillet from heat and place on a plate lined with paper towel to drain excess oil. Repeat for the remaining fillets. Using the same hot oil, fry the sweet potato slices until they're browned on either side. Remove from heat the drain excess oil with paper towel. Serve warm with your choice of dip or dressing.
