  • 1 lb Chicken, cubed
  • 1 lrg Onion, minced
  • 1 can Sliced peaches (set aside juice)
  • 2 Tbsp. Peanut butter
  • 1 tsp Sambal olek
  • 2 Tbsp. Soya sauce
  • 2 Tbsp. (large) tomato paste

  1. OK, my spouse is starting to wonder about all the mail I am getting from Dave. Time to send some back. This is a recipe which I received from my Tante Siemke (in Holland) a few years back. It is likely an Indonesian recipe. I call it Peanut Butter Chicken, for want of a better title.
  2. Fry meat, add in onion frying till onion is soft. Add in tomato paste, soya sauce, sambal and peanut butter, simmer about 5 min. ( Watch carefully as peanut butter sometimes burns) Add in peaches and sufficient juice to make a nice sauce. Simmer a few min longer. Serve with rice.
  3. Sambal can be adjusted to suit individual tastes. This is a very simple recipe, and can be ready to eat in under 20 min.
