.%3C/p%3E%3Cp%3EAnd%20both%20of%20us%20are%20usually%20so%20busy%20during%20the%20week%20that%20we%20try%20to%20relax%20and%20%E2%80%9Cdo%20nothing%E2%80%9D%20on%20the%20weekends%20but%20usually%20spend%20all%20day%20cleaning,%20running%20errands,%20and%20cooking%20so%20that%20we%20have%20food%20for%20the%20week%20and%20a%20small%20backlog%20of%20recipes%20ready%20for%20the%20blog.%20Not%20to%20mention%20social%20events.%3C/p%3E%3Cp%3ERarely%20do%20we%20have%20a%20weekend%20when%20we%20have%20nothing%20going%20on%20and%20I%20can%20just%20spend%20some%20quality%20time%20with%20my%20DVDs%20and%20knitting%20needles.%3C/p%3E%3Cp%3E(Knitting%20is%20relatively%20new%20for%20me;%20I%20started%20teaching%20myself%20last%20January.%20I%20like%20keeping%20my%20hands%20busy,%20and%20even%20on%20those%20rare%20occasions%20when%20I%20get%20to%20sit%20around%20all%20day%20doing%20nothing,%20I%20can%20still%20feel%20productive%20if%20I%20knit.)%3C/p%3E%3Cp%3EThis%20Halloween%20has%20pretty%20much%20snuck%20up%20on%20me.%20I%E2%80%99m%20usually%20much%20more%20with%20it,%20considering%20it%E2%80%99s%20one%20of%20my%20favorite%20holidays.%3C/p%3E%3Cp%3EShortly%20after%20Thanksgiving%20last%20year%20I%20started%20a%20serious%20job%20hunt.%20I%20never%20really%20wanted%20to%20be%20a%20medical%20receptionist%E2%80%94I%20wasn%E2%80%99t%20even%20originally%20hired%20to%20be%20a%20receptionist;%20I%20was%20an%20ophthalmic%20assistant,%20but%20my%20job%20was%20changed%20after%20I%20was%20hired%20for%20various%20reasons%20that%20were%20out%20of%20my%20control.%3C/p%3E%3Cp%3EIn%20August,%20I%20got%20an%20offer%20to%20interview%20at%20a%20different%20ophthalmology%20clinic%20that%20I%20was%20already%20familiar%20with%20from%20my%20work.%20I%20didn%E2%80%99t%20apply%20for%20the%20job;%20the%20medical%20foundation%20just%20held%20on%20to%20my%20resume%20from%20when%20I%20had%20interviewed%20for%20something%20else%20back%20in%20February.%20I%20knew%20a%20fair%20amount%20about%20ophthalmology.%20They%20interviewed%20me,%20I%20fit%20the%20bill,%20and%20I%20got%20the%20job.%3C/p%3E%3Cp%3EI%20finally%20started%20a%20few%20weeks%20ago%20and%20now%20I%E2%80%99m%20working%20for%20a%20busy%20department%20as%20an%20ophthalmic%20technician%20and%20it%E2%80%99s%20so%20fun.%20Fun,%20but%20busy!%20So%20yeah,%20Halloween%20pretty%20much%20caught%20me%20by%20surprise.%3C/p%3E%3Cp%3EI%20remember%20when%20I%20was%20a%20child%20and%20my%20brother%20and%20I%20would%20trick%20or%20treat,%20each%20Halloween%20I%20would%20get%20at%20least%20two%20candied%20popcorn%20balls.%20I%20know%20people%20still%20make%20these%20(there%20are%20a%20million%20other%20recipes%20online),%20even%20if%20no%20one%20really%20gives%20them%20out%20to%20trick%20or%20treaters%20anymore.%3C/p%3E%3Cp%3EWhen%20I%20was%20a%20child,%20that%20urban%20legend%20about%20people%20putting%20razor%20blades%20into%20homemade%20candy%20was%20just%20starting%20to%20circulate.%20It%20was%20scary,%20but%20I%20still%20loved%20getting%20the%20candied%20popcorn%20balls.%20Of%20course,%20the%20rumors%20have%20gotten%20so%20widespread%20that%20popcorn%20balls%20have%20all%20but%20disappeared%20from%20trick-or-treaters%20candy%20stashes.%20(Luckily,%20most%20of%20that%20took%20place%20after%20I%E2%80%99d%20gotten%20too%20old%20for%20trick%20or%20treating%20anyway.)%3C/p%3E%3Cp%3EI%20wanted%20to%20keep%20it%20simple%20this%20Halloween,%20and%20try%20my%20hand%20at%20candied%20popcorn%20balls,%20out%20of%20nostalgia.%20I%E2%80%99m%20pretty%20sure%20the%20candied%20popcorn%20balls%20of%20my%20childhood%20were%20made%20with%20corn%20syrup%20(and%20food%20coloring),%20but%20we%20made%20ours%20with%20marshmallows.%20(Who%20wants%20to%20have%20extra%20corn%20syrup%20in%20the%20house!?)%20And%20instead%20of%20mixing%20in%20candy%20like%20Jujubes%20or%20Dots,%20I%20decided%20to%20use%20peanut%20butter%20and%20chocolate%20because%20how%20awesome%20are%20peanut%20butter%20and%20chocolate%20together?!%3C/p%3E%3Cp%3EI%20never%20had%20popcorn%20balls%20with%20PB%20or%20chocolate%20when%20I%20was%20a%20kid,%20but%20that%E2%80%99s%20one%20nice%20thing%20about%20being%20an%20adult:%20I%20can%20do%20whatever%20I%20want.%3C/p%3E%3Cp%3EThese%20assemble%20very%20easily%20and%20would%20be%20perfect%20as%20a%20last%20minute%20treat%20for%20your%20little%20ghoulies.%3C/p%3E%3Cp%3EHave%20a%20safe%20and%20happy%20Halloween!%3C/p%3E%3Cp%3ERECIPE:%3C/p%3E%3Cp%3EHow%20to%20make%20it:%3C/p%3E%3Cp%3E1.%20Pop%20the%20popcorn%20by%20adding%20the%20sunflower%20oil%20and%20popcorn%20kernels%20to%20a%20large%20stockpot%20with%20a%20tightly-fitting%20lid.%20Stir%20to%20coat%20the%20popcorn%20in%20oil,%20then%20heat%20over%20high,%20covering%20the%20pot,%20and%20frequently%20giving%20it%20a%20good%20shake%20or%20two%20so%20that%20the%20popcorn%20doesn%E2%80%99t%20burn.%20Once%20the%20majority%20of%20the%20kernels%20have%20popped%20and%20the%20popping%20has%20started%20to%20slow,%20lower%20heat%20or%20remove%20from%20the%20burner,%20but%20keep%20the%20pot%20covered%20and%20continue%20to%20shake%20it%20sporadically.%20You%20should%20end%20up%20with%20about%206-7%20cups%20of%20popped%20popcorn.%3C/p%3E%3Cp%3E2.%20Combine%20the%20melted%20butter%20and%20the%20marshmallows%20in%20a%20large%20pot%20over%20medium-low%20heat,%20and%20stir%20gently%20until%20the%20marshmallows%20melt.%20Then%20stir%20in%20the%20peanut%20butter%20until%20melted.%3C/p%3E%3Cp%3E3.%20Using%20a%20large%20mixing%20bowl,%20add%20about%20a%20third%20of%20the%20popcorn,%20then%20a%20third%20of%20the%20melted%20marshmallow%20mixture%20and%20stir.%20Then%20repeat%20in%20batches%20until%20all%20of%20the%20popcorn%20and%20all%20of%20the%20marshmallow%20mixture%20have%20been%20incorporated.%20Then%20let%20it%20cool%E2%80%94just%20enough%20to%20be%20able%20to%20touch%20it%20but%20while%20it%E2%80%99s%20still%20warm%E2%80%94and%20use%20your%20hands%20to%20shape%20the%20sticky%20popcorn%20into%20balls%20and%20set%20on%20a%20plate%20or%20a%20parchment-lined%20baking%20sheet.%20(Optionally%20sprinkle%20a%20few%20extra%20chocolate%20chips%20into%20the%20popcorn%20balls%20as%20you%E2%80%99re%20shaping%20them.)%3C/p%3E%3Cp%3E4.%20In%20a%20small%20saucepan,%20melt%20together%20the%20chocolate%20chips%20and%20coconut%20oil,%20stirring%20continuously%20with%20a%20rubber%20spatula.%20Then%20drizzle%20the%20melted%20chocolate%20over%20the%20popcorn%20balls,%20and%20(enjoy%20right%20away%20or)%20refrigerate%20the%20popcorn%20balls%20until%20the%20chocolate%20hardens.%3C/p%3E%3Cp%3EMake%20ahead%20and%20wrap%20individual%20popcorn%20balls%20tightly%20in%20plastic%20wrap%E2%80%94they%20should%20keep%20like%20that%20at%20room%20temperature%20for%20several%20days.%3C/p%3E%3Cp%3ERelated%20recipe%20posts:%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
