  2. Preparation: In a bowl cover the dry morels with warm water and let stand till soft (about 15 min). Drain and reserve liquid. Rinse morels to remove any remaining sand, chop and set aside.
  3. Heat skillet and spray with extra virgin olive oil spray. Add in leeks, onion, garlic and morels. Saute/fry for 1 2 min over high heat. Add in white wine. Stir well and transfer mix to a saucepan.
  4. Add in warm chicken stock, morels liquid, and couscous to sauce pot. Let stand for 8 10 min. Just before serving stir in parmesan cheese, green peas and chives. Season with salt and pepper but be careful, parmesan cheese is high in sodium.
  5. Preparation for the Prawns: Preheat oven to 475 degrees. Season prawns with basil and freshly cracked pepper. Spray a large baking pan with extra virgin olive oil spray. Place prawns upside down in baking pan. Roast for 68 min, don't overcook. Serve immediately.
  6. Serves four.
