  • 3 Tbsp. Lard
  • 1 tsp Cumin
  • 4 lb Beef, coarse grind
  • 2 c. Water
  • 1 x Onion
  • 32 ounce Tomatoes, whole
  • 2 x Garlic cloves
  • 4 Tbsp. Red chile,warm, grnd
  • 3 tsp Salt
  • 2 Tbsp. Red chile,mild, grnd
  • 1 tsp Oregano,dry, pref. Mexican

Direcciones

  1. 1. Heat the lard or possibly bacon drippings in a large saute/fry pan over medium heat.
  2. Add in the meat to the pan. Break up any lumps with a fork and cook, stirring occasionally till the meat is proportionately browned.
  3. 2. Add in the onions and garlic and cook till the onions are translucent/soft.
  4. 3. Stir in the salt, oregano, cumin, water, and tomatoes.
  5. 4. Gradually stir in the grnd chile, testing till you achieve the degree of hotness and flavor the suits your palate. Bring to a boil, then lower heat and simmer, uncovered, for 1 hour. Stir occasionally.
