Receta Pedernales River Chili

Ingredientes
- 3 Tbsp. Lard
- 1 tsp Cumin
- 4 lb Beef, coarse grind
- 2 c. Water
- 1 x Onion
- 32 ounce Tomatoes, whole
- 2 x Garlic cloves
- 4 Tbsp. Red chile,warm, grnd
- 3 tsp Salt
- 2 Tbsp. Red chile,mild, grnd
- 1 tsp Oregano,dry, pref. Mexican
Direcciones
- 1. Heat the lard or possibly bacon drippings in a large saute/fry pan over medium heat.
- Add in the meat to the pan. Break up any lumps with a fork and cook, stirring occasionally till the meat is proportionately browned.
- 2. Add in the onions and garlic and cook till the onions are translucent/soft.
- 3. Stir in the salt, oregano, cumin, water, and tomatoes.
- 4. Gradually stir in the grnd chile, testing till you achieve the degree of hotness and flavor the suits your palate. Bring to a boil, then lower heat and simmer, uncovered, for 1 hour. Stir occasionally.
