  1. Combine 4 c. water and lemon juice. Refrigerate30 min. Peel lemons for other uses. Cut lemon rind into strips.
  2. Combine rind, sugar and remaining 1 c. water in a saucepan. Cook over medium low heat, stirring constantly, till sugar dissolves. Bring to a boil; boil 7 min. Let cold. Add in to lemon juice mix; stir. Refrigerate2 hrs before serving. Yields 1 1/2 qts.
