Ingredientes
- For the potatoes:
- 3 lbs Yukon Gold potatoes, scrubbed
- Kosher salt
- ¼ cup fresh lime juice
- ¼ cup extra virgin olive oil
- 2 to 2 ½ tablespoon aji Amarillo paste (use more or less depending on desired spiciness)
- For the chicken filling:
- ¾ lbs cooked chicken, chopped
- ½ cup red onion
- ½ cup mayonnaise
- 2 tablespoons chopped flat leaf parsley
- 1 tablespoon chopped cilantro
- Salt, to taste
- Freshly ground black pepper, to taste
- For finishing the causa:
- 1 to 2 ripe avocados, sliced
- Black olives, pits removed and quartered
- 2 hard-boiled eggs, quartered
- Roasted red bell pepper, cut into slices
