Receta Piña colada macarons
Ingredientes
- 140g desiccated coconut (unsweetened)
- 140g powdered (confectioner’s) sugar
- 100g egg white (from approx. 3 eggs), room temperature, divided 50/50
- 100g granulated (white) sugar
- 40g water
- The filling
- 1 x 425g (15 oz) can pineapple in juice (270g or 9 1/2 oz drained, according to the can)
- 2 tsp rum (I used Bacardi Black because that’s what I had)
- 1 tbsp corn starch
- 100g (1/2 cup) granulated (white) sugar
- 4 large egg yolks, lightly beaten
- 30g butter (2 tbsp), diced, room temperature
