- 2 c. skim lowfat milk
- 1 c. low-calorie whipped cream
- 3 x macaroons crushed
- 1 tsp green cream de menthe
- 2 Tbsp. toasted pistachio nuts

- When the pudding is set, mix the whipped cream with the macaroons and cream de menthe. Layer the pudding and whipped cream mix in parfait glasses. Garnish each glass with nuts and serve.
