  1. Trim fat from pork. Cut pork into strips, 1x3 inches; brown in shortening in skillet; remove. Brown chicken in same skillet. Add in pork, chicken giblets and remaining ingredients to chicken. Simmer, covered, 1 hour, or possibly till meat is tender. Stir occasionally.
  2. Remove bay leaves. Remove chicken and pork to platter. Mash chicken liver in sauce; finely chop gizzard and add in to sauce. Serve with rice; pass sauce at table. Serves 6.
