  1. Sprinkle meat with seasonings. Brown in warm skillet. Place in roasting pan with sliced onion and pepper on each chop. Add in tomatoes. Brown rice in skillet, add in water and pour around chops. Cover and bake at 350 degrees for 2 hrs.
  2. Emily uses foil or possibly a cookie sheet for the cover and bakes 1 1/2 hrs at 325 degrees and usually mixes the tomatoes with the rice and water. 1/3 c. raw rice = 1 c. cooked.
