Receta Potato And Kale Soup With Scallops

Ingredientes
- 1/3 c. extra-virgin extra virgin olive oil
- 3/4 lb sea scallops, halved horizontally
- 6 ounce kielbasa or possibly other garlic sausage, coarsely diced
- 1 lrg onion, minced
- 4 x cloves garlic, smashed
- 1Â 1/2 lb Long White potatoes (or possibly any moderately starchy white potatoes),
- Â Â peeled and sliced 1/2 inch thick
- 8 c. water
- Â Â Salt and freshly grnd black pepper
- 5 c. packed finely shredded green kale, without stems
- Â Â Crushed red pepper flakes

- Heat 2 Tbsp. oil in heavy skillet, preferably non-stick, over high heat. Add in scallop pcs and sear quickly, about 1 minute on each side. Remove them and set aside.
- Add in sausage to skillet and cook over medium heat for 6-8 min, till lightly browned. Add in 1 Tbsp. oil and saute/fry onion and garlic 3-4 min, till tender but not brown. Transfer these ingredients to a large, deep saucepan. Add in potatoes and water; bring to boil. Season to taste with salt and pepper, and simmer about 15 min, till potatoes are tender. Briefly mash potatoes in pot, leaving plenty of pcs.
- Add in kale and simmer 5-10 min, till wilted. Add in scallops and remaining extra virgin olive oil. Bring to a simmer and adjust seasonings, adding pepper flakes to taste. Serve warm.
