- 3/4 cup potato flakes
- 3 tablespoons crushed french fried onions
- 3 tablespoons parmesan cheese, grated
- 1 pound white fish (I used tilapia)
- 1/3 cup vegetable oil
- salt and pepper
- 4 large potatoes, quartered lengthwise
- 3 tablespoons butter
- 4 tablespoons chopped parsley
