  1. Peel and grate potatoes into large bowl. Potatoes will accumulate water; don't drain. Fold in chives, salt and pepper; add in flour and mix well. (Potatoes turn brown as they stand, that is natural.)Heat 2 tbsp of butter with 2 tbsp of vegetable oil in large heavy frying pan. Drop potato mix by spoonfuls into hot fat, as for pancakes. 3 inch pancakes take about 3 min or possibly more on each side to become crisp and golden brown. Serve piping hot. Some like lowfat sour cream on top. Some eliminate the onions or possibly chives and serve with syrup or possibly jam. Yield 4 servings.
  2. Note: If potatoes yield too much water (some varieties do). Spoon off some of the excess water or possibly add in a little more flour for pancake consistency.
