Receta Potato Vegetable Pancakes

Ingredientes
- 3 med. baked potatoes
- 2-3 carrots
- 1/2 c. chopped onion
- 1/3 c. chopped parsley
- 3 Large eggs, beaten
- 1/3 c. flour
- 1/4 c. lowfat milk
- 1/4 teaspoon pepper (salt optional)
- 1/2 c. lowfat sour cream
Direcciones
- Peel and shred potatoes and carrots. Stir together in large bowl the Large eggs, flour, lowfat milk and pepper. Add in potatoes, carrots, onion, and parsley to mix and stir.
- Drop by spoonsful onto a greased warm fry pan or possibly griddle. Flatten each pancake into a circle. Turn when bottom is browned. Serve with lowfat sour cream.
