  • 1 lb aged provolone cheese see * Note
  • 1/4 c. flour
  • 1 Tbsp. minced fresh oregano
  •     (or possibly 1 tspn dry oregano)
  • 2 tsp aji molido see * Note
  •     (or possibly 1/2 tspn chile pwdr)
  • 2 tsp extra virgin olive oil
  •     Freshly-grnd white pepper to taste

Direcciones

  1. * Note: Aged provolone and aji molido (Argentine coarsely grnd chile pwdr) are available at specialty markets and some supermarkets.
  2. Dredge the cheese in flour, dusting off excess. Mix the remaining ingredients into a paste and smear half of it over the top of the cheese.
  3. Place cheese spice-side up over warm coals and grill till the cheese begins to heat but still holds its shape and the underside is scored, about 3 min. Flip and brush the second side of the cheese with remaining spice mix. Grill till second side is scored.
  4. Cut into wedges and serve immediately. Provoleta may also be prepared on an indoor grill or possibly in a ridged skillet.
  5. This recipe yields 8 to 10 servings.
