Is it panini? Is it pizza? No, it's cheese-covered SPAM on grilled sourdough bread. It's a quick and easy recipe that literally 'cooks' in a couple of minutes. I used teriyaki-flavored SPAM and provolone cheese and they blended quite well with the sour bread. Serve it with a side of fresh, chilled cucumber slices and you'll have a delicious snack or breakfast befitting the busy person that you are.

  3. Remove from heat and place on a plate lined with paper towel to drain excess oil.
  4. Grill the bread slices on a panini maker or stove top and set aside. Melt the cheese on a slightly heated pan or in the microwave.
  5. Place a slice of SPAM on a grilled bread slice and pour melted cheese over the SPAM.
  6. Using a small butter knife, spread the cheese evenly on top of the SPAM.
  7. Top with fresh tomato and serve with cucumber slices on the side.
  8. If desired add salt and pepper to taste
  9. Repeat process for the other bread slice.
