Receta Pulled Pork Barbecue

Ingredientes
- 1 whl pork tenderloin - (abt 16 ounce) all fat trimmed
- 1 tsp chili pwdr
- 1/2 tsp garlic pwdr
- Â Â Vegetable cooking spray as needed
- 1/2 c. finely-minced onion
- 1Â 1/2 tsp chopped garlic
- 1 can crushed tomatoes - (15 ounce) undrained
- 1 Tbsp. cider vinegar
- 1 Tbsp. prepared mustard
- 1 tsp chili pwdr (1 to 2)
- 1/4 tsp maple extract
- 1/4 tsp liquid smoke
- 2Â 1/2 tsp Equal For Recipes
- Â Â (or possibly 8 packets Equal sweetener or possibly 1/3 c. Equal Spoonful)
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 6 x multigrain hamburger buns toasted

- Rub pork with 1 tsp. chili pwdr and garlic pwdr; place in baking pan. Bake in preheated 425 degrees oven till pork is well browned and juices run clear, 30 to 40 min. Let stand 10 to 15 min. Cut into 2- to 3-inch slices; shred slices into bite-size pcs with fork.
- Spray medium saucepan with cooking spray; heat over medium heat till warm. Saute/fry onion and garlic till tender, about 5 min. Add in tomatoes, vinegar, mustard, chili pwdr, maple extract and liquid smoke to saucepan; heat to boiling.
- Reduce heat and simmer, uncovered, till medium sauce consistency, 10 to 15 min. Stir in Equal. Season to taste with salt and pepper. Stir pork into sauce; cook till warm, 2 to 3 min.
- Spoon mix into buns.
- This recipe yields 6 servings.
